Chicken Cacciatore
(Free on Farm Day (R)
Fry Light Cooking Spray
Salt & Freshly Ground Black pepper
12 bacon rashers, all visible fat
removed and roughly chopped
1 onion, roughly chopped
2 celery sticks, roughly chopped
1 carrot, roughly chopped
2 garlic cloves, crushed
115ml chicken stock
2 x 400g cans cherry tomatoes
(chopped tomatoes would also do)
2 bay leaves
A small handful of basil leaves
1. Heat the non-stick frying pan sprayed with fry light. Season the chicken and add to the pan and fry
until golden. Transfer to a large pan.
2. Spray the frying pan with a little more fry light. Add the chopped bacon and fry for 2 minutes.
Stir in the onion, celery, carrot and
garlic and cook for 6-8 minutes, or
until the onion is tender.
3. Add the onion mixture to the
chicken and stir in the stock, tomatoes and bay leaves. Bring to the boil, reduce the heat and then cover the pan and simmer for 25-30 minutes, or until the chicken is cooked. Serve garnished with basil.
