Devilled Liver & Onions

(Free on Farm Day - Serves 4)

 

450g lamb“s liver

4 level tsps mustard powder

4 tbsp Worcestershire sauce

1 level tsp turmeric

2 level tsp ground cumin

2 level tsp paprika

1 level tbs tomato puree

2 large onions, thinly sliced

Salt & freshly ground black pepper

 

 

1.  Rinse the liver, pat dry with kitchen towel and cut into strips. 

In a bowl mix together the mustard powder, Worcestershire sauce, turmeric, cumin, paprika and tomato puree to make a marinade.

2.   Add the liver and onions to the marinade mixture and mix well to cover the liver.  Leave in a cool place for at least 30 minutes to

marinade.

3.  Put the liver, onions and marinade mixture in a non-stick frying pan and cook slowly over a low heat for about 8-10 minutes, until the liver and onions are cooked and tender.  Season to taste with salt & pepper, then serve hot with free vegetables.
